THE HEALTHY OPTION – HOMEMADE SPICY MEXICAN BAKED BEANS

Baked beans are a great long lasting shot of energy to start off the day.

Unfortunately the majority of store bought baked beans are loaded with sugar and other nasties that our bodies don’t need.

The solution is to make your own.

With this recipe I have chosen a spicy Mexican flavour but you could easily substitute other tastes you desire.

HOMEMADE SPICY MEXICAN BAKED BEANS

Ingredients

  • 1 400gram tin of tomatoes
  • 1 425 gram of butter beans
  • 1 clove of garlic
  • 1/2 cup of diced onion
  • 1 tablespoon of vegetable seasoning mix
  • 1 tablespoon of Mexican seasoning mix
  • 1 tablespoon of hot sauce
  • 1/2 a cup and a splash of water

Instructions

Place garlic and onion into a non stick pan. Sautée until browning starts. Add a splash of water and stir.

Add in the tomatoes, beans, seasonings, hot sauce and 1/2 cup of water.

Cook on high until bubbling then turn down to simmer until paste thickens.

Serve up on a piece of wholewheat sourdough toast with diced avocado garnished with fresh coriander.
