Mac and Cheese for many people around the world is renowned as a comfort food.
This is my version with some diced vegetables added to increase the nutritional value of the dish.
MAC AND CHEESE WITH DICED VEGETABLESPrint Recipe
- 2 cups of pasta curls
- 2 cups of diced vegetables
- 1 cup of plant based milk or water
- 1/3 cup of Leahey Cheese Flavoured Sauce Mix
- Cracked black pepper
- Fresh basil leaf
Simultaneously, cook the pasta as per the directions on the packet and lightly steam the diced vegetables.
Drain water from the pasta and take vegetables off the heat.
In a non stick saucepan place the cup of milk/water and 1/3 cup of the cheese flavoured sauce mix.
Stir constantly with a whisk
until it starts to boil. Continue for another two minutes then remove from the heat. Allow to thicken further (3 minutes).
Combine the pasta and diced vegetables in two bowls (or one bowl and a leftovers container).
Pour in an even amount of the thickened cheese sauce into each.
Add cracked black pepper and garnish with a fresh basil leaf.
